AVOCADO LENTIL SALAD

Avocado Lentil Salad is a tasteful accompaniment that brings in the best flavors of lentils as well as fresh greens. It can be eaten as it is as well! Here is how to make it.



Ingredients

  • 1/2 cup Masoor Dal / Red Gram
  • 1 Ripe Avocado Peeled and Cubed
  • 1 cup Salad greens I used lettuce
  • 1 Orange Cut into wedges

For the dressing

  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Orange juice
  • 1 tbsp Lemon juice
  • 1 tsp Orange zest
  • Salt to taste
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Wash the lentil and add it in a pressure cooker along with some salt and 1 cup of water.
  2. Pressure cook until the lentil is done.
  3. Drain the lentil and let it cool.
  4. Add cooked lentil in a bowl along with avocado, salad greens and orange in a bowl and mix.
  5. Add all the ingredients for dressing in a bowl and mix well.
  6. Pour the dressing over the salad and mix gently.
  7. Serve immediately.
